Co-founders Malgorzata ‘Gosia’ Modlinska and Joanna Boczek created their latest flavor after a friend quipped about putting crab roe in the dumpling. But it sparked an idea and resulted in this: the stuffing consists of pork, crab roe, red wine, and spices, while the dough is colored with paprika and tomato paste. They are then boiled, pan-fried, topped with chives, and served with sour cream and soy sauce.
For those who aren’t into seafood, the dumplings aren’t overly crabby. Instead, it’s meaty and juicy with a hint of the sea, and wonderfully savory from the tomato paste. A dip into sour cream livens up the sensation, but we rather the soy sauce, which deepens the umami flavors. Pair it with a shot of bison grass vodka to warm up your insides.
