o on a culinary adventure around the Mediterranean at The Portman Ritz-Carlton, which is launching The Souk Sunday Brunch showcasing a lavish selection of iconic dishes from southern Europe.
Happening from March 17 at Portman’s Restaurant, the brunch celebrates cuisines along the Mediterranean coastline with cultural influences from Greece, southern Italy, Spain, Morocco, Turkey, and more, covering salads, antipasto, seafood, cheeses, bread, hot dishes, carving stations, barbecues, and a wide array of delectable desserts.
“The Souk means the market in French or Arabic for traditional ingredients and a place to sit down and enjoy local meals and snacks prepared and served with an exotic flair,” said executive chef Fabio Pineda.
True to the ideals of Mediterranean cooking, chef Fabio sources ingredients from local organic farms, and the food changes according to the seasons. Start off your meal with cold items including feta and watermelon, grilled octopus escabeche, dates stuffed with chorizo, hummus, and gazpacho.
There’s a selection of 16 assorted European cheeses, as well as an extensive choice of pastries such as cranberry and walnut bread, onion and cheddar focaccia, and apricot hazelnut sourdough, which complement a seafood bouillabaisse.
Among the hot dishes, highlights include slow braised beef cheeks with creamy polenta, pan roasted sea bass, baked Sicilian orecchiette with sardines, vegetable moussaka, and lamb casserole with garlic and fava beans. A carving station offers dishes such as olive crusted salmon with lemon butter and rock salt roasted rib eye, while the barbecue pork station serves crispy suckling pig, and baby back ribs. A doner kebab can also be cooked to order.
Finally, wrap your brunch up with Mediterranean-inspired desserts such as baklava, eclairs, baci di dama, panna cotta, tiramisu, chocolate pudding and more. Additionally, diners can enjoy generous beverage options with unlimited Moët & Chandon Imperial Brut, craft cocktails, wine, beer, and soft drinks.
