Wujie (The Bund)
Fine dining vegetarian restaurant Wujie regularly introduces new set meals based on the seasons and ingredients, and their latest winter menus stay true to their ideal. They have different prix fixe options based on prices and the number of dishes, but one of the most popular is their Clouds menu. At ¥599 per person (plus 10 percent service charge), you get eight courses that include Jiangnan-style burdock root with nostoc, a type of algae that looks like caviar, Thai green curry with bamboo fungus, crispy rice, and water shield, a type of aquatic vegetable, and this lion’s mane mushroom with black truffle, arrowhead root, blackberry, lily bulb, and sweet peas. Modern Californian eatery Highline drops their winter menu with plenty of elevated seafood classics. There are dishes such as beet-cured salmon carpaccio and New England clam chowder, as well as the French fry-like crispy white bait with Japanese-inspired flavors of sansho pepper and yuzu kosho creme fraiche. Jumbo mussels get the dutch oven treatment by roasting them in white wine, lemon, and basil pesto, while tempura cauliflower tastes like a healthier form of McNuggets. If land animals are more of your thing, get the duck confit with sweet potato, foie gras, and endive, or a whole suckling pig resplendent with sherry jus, and served with Job’s tears and mushroom-stuffed squash and rosemary apples. It feeds four to six people, or go by yourself and have sumptuous takeaways for days.
