At The ZUK Bar, head of mixology Vincenzo Pagliara draws heavily from nature to create avant-garde cocktails that highlight a particular flavor, while URBAN Lounge increases their wide array of gins that brings a unique botanical experience each time.
The ZUK Bar
Cocktails are usually identified by a witty name or the spirit they convey, but Pagliara is distilling the drink down to its pure essence. Using botanicals, flowers, and other living forms as inspiration points and drink names, he mixes them with spirits and other ingredients to reveal the true taste of nature.
Fruits, for example, are represented in the Olive, which combines Malfy Gin Rosa from Italy with extra virgin olive oil, cherry tomato-infused aromatized wine, citrus, and soda water. The nuttiness of the olive oil and the gin’s pink grapefruit flavors transport drinkers to the shores of the Amalfi coast, while the olive-shaped cucumber garnish adds a playful touch.
There’s also the Wormwood, which takes its cue from a herb commonly used to make an aromatized wine called vermouth. It’s slightly bitter, which complements the fruity notes of Patrón Reposado tequila, and pairs well with aromatic coconut and fresh bamboo sorbet. A wormwood garnish is burned to bring out its smoky, herbal character.
Pagliara turns to the underground with Ginseng, featuring Grey Goose vodka, ginseng, Hosui pear, fermented maraschino, and citrus. The medicinal root is turned into a pulp that lends a slightly bitter, earthy flavor, which is mixed with the sweet pear and balanced with a refreshing paint of carrot.

One of Shanghai’s largest gin collection just got larger at URBAN Lounge, which expanded its vast Gin Library to include more styles of the juniper spirit plus a special tasting menu and happy hour specials.
They currently have 120 different types of gin on offer, and new additions include Normindia gin from France, which distills apples for a sweet taste and fruity fragrance. Another is Gin Tonik by Distillerie De Paris, the first legal distillery in the French capital, which is made from quinine and creates a dry, zesty experience in a classic G&T. Malfy Gin Rosa is ideal for the warmer months, with notes of Sicilian grapefruit and rhubard from the Salerno coast in southern Italy.
Try these styles through the new Gin Degustation (¥228 per person), which offers four types of gin from the vast list paired with tonic water and any choice of garnish. Any order of the Gin Degustation from Friday to Sunday also comes with house-made juniper cakes.
Additionally, URBAN Lounge has new signature cocktails from its Gin Libations menu such as the Gimlet (Shanghai-made Peddlers gin, honeysuckle tonic cordial, and pomelo) and D(rye) Martini (Kyro Napue rye gin, house-blend rye vermouth, and lemon oil).
